Where can I edit what is displayed in the from area for the email sent out for Request for confirmation after user signs up?

Right now it is putting in some weird email not related to my site.

Should be on the configuration page. Look for "From email address for system messages" and use the edit link.

I found this - From email address for system messages -

It shows noreply@mydomain.com now, when the emails come into my inbox I t shows the from as mydomain@box373.hostcompanydomain.com

Why is this? I would like to have it show noreply@mydomain.com

Sounds like you are using phpMailer() ?? If so, you'll need to switch to SMTP using your own email account. The changes should be made ion the lists/config/config.php file, around about lines 700-705
